I made taco meat with sauteed onions and sweet potatoes and tossed in a can of black beans at the end. I seasoned it with the giant taco seasoning mix from costco.....I like that mix because it doesn't have fillers. The kids liked the tacos....

I took the leftover taco mix with the sweet potatoes and black beans and used it as a filler for mock argentine empanadas. Put the filling in an uncooked flour tortilla (also from costco), add two slices of hardboiled egg and some green olives (Nichols hates green olives, he likes black olives instead and Ethan hates eggs unless they are on french toast so he will just have to suffer and pick them out because mom likes them). Now make sure you roll it up by tucking in the sides so it won't leak and bake at 375 until the tortillas have browned. Usually I make my own empanada dough but this is quicker.

Also like the empanadas but made with leftover Thanksgiving turkey. Saute an onion with sweet potatoes and celery in olive oil. Add salt & pepper (I'm liking Kosher salt these days.....seems to add more flavor). If you want it spicy add some red pepper. After the sweet potatoes are soft add chopped leftover turkey, warm it, and then add cream cheese or the light cream cheese. Fill your uncooked flour tortilla with a scoop of leftover cranberry sauce and then the turkey mixture (I know mushrooms would be good in this but alas the kids have yet to like those.......). Fold so it won't leak and bake again around 375 until the tortilla is golden brown.......maybe 15 minutes or so. Kids loved these.
