Creative with Cauliflower

Vegetable Frittatas
Steam a head of cauliflower with carrots (half and half). When soft, mash with a potato masher and add sauteed onions, salt (I like Kosher), uncooked eggs to coat (3-5 or so), crushed matzo crackers (they are like unsalted saltines), a little pepper, and wheat germ for the feel good factor.

Pan fry in olive oil in small pancake size and serve with applesauce. My kids love these and the sweeter the carrot you can find the better.

The "feel good" factor. That's funny. I'm going to try this again. I tried it once but didn't think it really turned out. I made it a little differently.
